The Culinary Supervisor will provide hands on leadership in a high-volume kitchen with the ability to work all stations. The ability to work independently with no supervision is a must, as is experience in food handling, basic prep, and advanced knife skills. Understanding the proper use and maintenance of major kitchen equipment, including stoves, refrigeration, slicers, knives, dish machines, etc., is necessary to maintain kitchen standards.

Essential Job Responsibilities:
  • Oversee appropriate labor schedules, maintain temperature logs, communicate prep schedules, and manage daily food requisitions.
  • Contribute to a culture of engagement through training, having an awareness of staff needs, and effective application and promotion of company policies.
  • Conduct oneself with safety in mind and undertake all job requirements to guarantee a safe environment for oneself and fellow team members.
  • Supports all aspects of Food and Beverage and is committed to training, supervision, and leadership for all culinary Team Members.
  • Assists in the development of Recipes, Prep Lists, Order Guides, and Operating Procedures.
  • Assists in the adherence of food, labor, and operating costs to remain in line with budget goals.
  • Ability to sell concepts and ideas to management peers and team members.
  • Ensures proper receiving, storage, and rotation of food products.
  • All other duties as assigned.

Qualifications/Knowledge:
  • Must already have or be willing to complete the New Mexico Food Handler Certification before or within 30 days of hire
  • 6 years of progressive culinary career growth with a minimum of 2 years of leadership experience
  • Fluent in verbal and written English; other language skills preferred
  • Proficient in all areas of the kitchen and cost control
  • Good working knowledge of the fundamentals of cooking, i.e., sauces, soups, stocks, and cooking procedures
  • Formal culinary training is preferred
  • Ability to work a flexible schedule, including weekends, holidays, and evenings
Work Environment:

Taos Ski Valley, Inc. is often a fast-paced work environment, especially during holidays and Peak days. TSVI is located in a high-altitude alpine environment. Position may require travel on uneven, snow-packed, or icy terrain and may be exposed to wet, cold, and/or humid conditions. Must be able to work in close quarters and with other staff.

Physical Demands of Position Include:

Will often lift to 10 pounds and occasionally up to 50 pounds. 80-100% of the time will be spent standing, walking, reaching, talking, hearing, tasting, and smelling. 75% of the time will be spent standing, reaching, talking, hearing, tasting, and smelling. 25% of the time may be spent walking, climbing/balancing. 5% of the time will be spent sitting and/or being exposed to the outdoors, including in winter weather conditions.
