Duffy's Senior Assistant Chef Job Description
Reports to: Chef
Job Summary: Responsible for preparation, presentation, and service of all menu items. Also responsible for interviewing, training, and developing Back of House staff.
Major areas of responsibility:
•Complete knowledge of all expectations of the Assistant Chef.
•Understands the comparison of the monthly food cost.
•Knowledge of the Declining Budget.
•Advanced P&L Involvement.
•Identifying problem cost areas and managing solutions.
•Involved in budgeting and forecasting.
•Weekly labor planning and proactive control over time.
•Control food cost to impact profitability.
•Long term solutions to lower food cost for higher profits.
•Comfortable with mentoring Front of House managers on food specs.
•Model outstanding hospitality.
•Conduct reviews and evaluations Back of House staff.
•Conduct interviews and assist in the hiring process of Back of House staff.
•Complete new hire paperwork on SNAG.
•Effectively assume all Chef responsibilities in the absence of the Chef.
•Participate in store level manager meetings.
•Teach and mentor Assistant Chefs on all aspects of the business.
•Understand the Core Beliefs.
•Temp check all equipment and record data on specified forms.
•Comply with recipe specs.
•Enter all invoices
•Understand ordering and receiving procedures.
•Understand health inspection and EcoSure compliance.
•Maintain Food Manager Certification.
•Maintain a positive and professional approach to coworkers and customers.
