Oregon State University - Cascades is seeking a Catering Chef. This is a full-time 1.00 FTE, 12-month, professional faculty position.

This position is located in Bend, OR.

In support of the OSU-Cascades Signature Areas of Distinction, the Dining Services team exists to support the health and wellness of all students, faculty and staff by providing food and beverage choices that facilitate our own health, contribute to the collective well-being of our community, and work in collaboration with internal experts as well as external partners. The OSU-Cascades Dining Services team is committed to:

The purpose of the Sous/Catering Chef is to provide consistent, innovative, quality food in a fast paced, high volume commercial kitchen environment. This role is responsible for establishing and enforcing processes that ensure proper food handling techniques and health department compliance, ordering of food and supplies, developing menus and recipes within the guidelines set by the Culinary team and meeting food cost goals. This position also provides direction and continuous training for culinary staff and student workers on a daily basis and oversees production and food presentation for OSU-Cascades in conjunction with other culinary members and managers, and partners with Dining Leadership team as needed regarding SEIU/OPEU contractual guidelines.

Key Responsibilities

Catering Order Fulfillment (45%)
  • Plans and manages food quantities for catered events.
  • Lead the planning, preparation, and execution of all catered events.
  • Inventory catering supplies and verify that needed quantities are available for service.
  • Create and review BEO and prep guides daily and make note of any changes.
  • Assist the Chef/Manager to develop, maintain and cost recipes for catering menu.
  • Work directly with customers on planning special menus for events and conferences as needed.
  • Assist with food purchasing for catered events.
  • Communicate with kitchen staff about upcoming events and work with Chef/Manager to make sure that support staff is scheduled when needed.
  • Ensures compliance to all applicable regulatory requirements.
  • Maintain a current knowledge of culinary trends.
  • Responsible for the high-quality, visually appealing food presentation during an event.
Food Preparation & Oversight (40%)
  • Utilize current culinary techniques and in house procedure in production, presentation and service to assure high quality.
  • Ensure high quality food production, presentation, flavor, and customer service.
  • Support the Chef/Manager in the oversight of all food preparation.
  • Provide leadership and support to the entire kitchen staff.
  • Ensure compliance with all university policy and regulatory standards.
  • Assist in developing recipes and instructions for all food preparations.
  • Ensure that all food service areas meet cleanliness and sanitation standards.
  • Serve as back-up for placing orders with approved vendors to meet business needs.
Culinary Leadership (10%)
  • Ensure department safety and sanitation standards are being exceeded daily including the following: ensuring daily temperature logs are maintained accurately, staff are trained and following established safety/sanitation policies, HACCP procedures and being followed and exceeded and that daily inspections are made to verify all internal and exterior areas are clean and debris-free.
  • Assist with operational leadership of the day-to-day function of the food service operations.
  • Assist in creating menu and rotation plans.
  • Assist in menu development that meets multiple dietary and allergen needs along with healthy cooking principals.
  • Work with Chef/Manager to plan, evaluate and revise procedures and practices to ensure efficient, effective workflow and quality standards.
  • Act as role model regarding cleanliness and appearance, hygiene, food handling, work areas and food storage.
  • Promote efficient use of time, equipment, technique and ingredients.
  • Assist Chef/Manager with food pricing and vendor sourcing. Participate in daily/weekly production meetings and facilitate as needed.
Other (5%)
  • Complete various projects and other duties as assigned.
What You Will Need
  • Associates degree, vocational or technical degree in Culinary Arts, completion of a certified culinary apprenticeship, equivalent combination of education and work experience may be substituted.
  • 5 years of progressive chef experience with a minimum of 3 years' full time work experience as a Sous Chef or Lead.
  • Supervisory experience in a large commercial restaurant, hotel, catering, or institution.
  • Demonstrated knowledge in a variety of culinary skills, techniques and styles. E.g., experience in exhibition cooking, experience in various global cuisines. Must have strong knowledge of the flow of food through the preparation process, presentation, and service.
  • Demonstrated ability to teach others.
  • Excellent oral, written, and communication skills.
  • Demonstrated ability to cooperate, follow instructions, and organizational skills.
  • Basic working knowledge of windows-based personal computer applications (e.g. Work Excel, e-mail).
  • Demonstrated passion for food and the food service industry.
  • Ability to lift, carry or push up to 50lbs.
  • Working knowledge of ServSafe principles; certification required within 90 days of employment.
  • Must obtain an Oregon Food Handlers Certificate within 30 days of the hire date and maintain throughout employment with OSU-Cascades Dining Services.
  • Pursuant to OSU-Cascades Dining Services policy, this position is required to maintain current CPR/AED certification within 90 days of employment, or when training becomes available.
  • Ability to promote and enhance diversity as demonstrated by previous experience working with individuals and groups with widely varying backgrounds, perspectives, education, and skills.
  • Demonstrated knowledge of food allergens and special dietary needs.
This position is designated as a critical or security-sensitive position; therefore, the incumbent must successfully complete a criminal history check and be determined to be position qualified as per University Standard: 05-010 et seq. Incumbents are required to self-report convictions and those in youth programs may have additional criminal history checks every 24 months.

What We Would Like You to Have
  • Working knowledge of computerized menu and recipe systems strongly preferred.
  • Bachelor's degree in a field related to the work performed.
  • Degree from a Culinary Arts School.
  • Experience as a chef executing a variety of menus for various catering events both small (20 - 100 guests) and large (200 guests +).
  • Extensive work as a chef in a full service culinary environment (i.e. breakfast, lunch, dinner, receptions) with dining room service, casual service, catering, and special events.
  • Experience working in a team based environment.
  • Experience working with a clientele that has various special diet needs.
